Ganevat Négoce continues the work carried out by Jean-François Ganevat in the Jura region, using a selection of grapes from numerous small plots, often cultivated by partner winegrowers. This diversity of plots allows them to work with Jura grape varieties in varied soil and exposure conditions, with particular attention paid to the identity of each origin.

The local grape varieties, often sourced from old vines, are vinified with minimal intervention. The long, patient aging process aims to preserve the precision of the wines and their capacity to evolve over time. Savagnin plays a central role, expressed in contrasting styles depending on the soil: taut and upright profiles on marl, fuller and more structured on deeper soils.
