Thinking of a rosé as a wine for aging doesn't immediately come to mind. Yet, while Cabernet d'Anjou presents very typical aromas in its youth: "fresh grape" and gives the impression of biting into Cabernet grapes on the vine, with age it is "another world".
The color turns coppery, the nose is a spiral of aromas of bitter oranges, candied fruit, spices, cocoa, and licorice. The palate remains smooth and always with that sweetness without excess, a natural balance.

This "Vin de dentelles," with its pale orange hue, delicate nose, and smooth, fresh palate, pairs beautifully (straight from the refrigerator) with exotic dishes, charcuterie, offal, and desserts made with red or exotic fruits. After several decades of aging, it will complement desserts featuring oranges or chocolate.

In Anjou, Domaine de Bablut primarily works with Chenin Blanc and Cabernet Franc, emblematic grape varieties of the region. The vineyard rests largely on schist soils, which impart a tension and vibrancy to the wines, perceptible in both the white and red varieties.
