After direct vertical pressing, the grape must undergoes natural cold settling, followed by fermentation with indigenous yeasts in concrete tanks. Aging on the lees for 6 to 8 months enriches the wine's structure, with no added sulfur until bottling, thus preserving the authenticity of the terroir.
