Schnabel wine is made from grapes carefully harvested in early October. After destemming and a light maceration, the juice ferments spontaneously in large oak barrels. Aging on fine lees for eight months adds a beautiful complexity to the wine. The vineyard benefits from an ideal exposure on terraced slopes, and the unique terroir of loess and conglomerate rock contributes to its distinct minerality.
