Ordovicien is a dry white wine with the distinctive character of its terroir. It is made from the great noble grape variety of Anjou: Chenin Blanc. The rocky schist slopes give it its distinctive character. Its deep color and aromatic nuances of candied fruit (apricot, fig, citrus) along with the swirl of toasted and smoky aromas hint at its concentration. The ample and smooth structure on the palate pairs easily with pressed or washed-rind cheeses. A white wine for aging, yet already approachable.

Our opinion on the vintage

The wine is golden and brilliant. The nose is delicate and ripe, complex, with aromas of poached pear, quince jelly, linden blossom, toasted dried fruit, and toasted brioche. From the first sip, you are captivated by a tension that never lets up. But very quickly, the wine expands, coating the palate with a dense yet supple texture, its aromas blending candied white fruit with toasty notes from barrel aging. The finish prolongs the tension with added concentration, but without the slightest astringency: on the contrary, it is sapid, leaning towards balsamic notes – licorice, Tahitian vanilla, apple balsamic – and always those toasty notes from oak aging.

In Anjou, Domaine de Bablut primarily works with Chenin Blanc and Cabernet Franc, emblematic grape varieties of the region. The vineyard rests largely on schist soils, which impart a tension and vibrancy to the wines, perceptible in both the white and red varieties.

The winemaking process is carried out with precision, favoring moderate extraction to preserve the purity of the fruit and the balance of the structure. The white wines express themselves with lively and straightforward profiles, while the reds maintain a clear framework and measured structure.
