The Olivier Pithon estate is an independent producer located in the **Côtes Catalanes**, in Pyrénées-Orientales, producing a range of IGP Côtes Catalanes wines, reflecting the diversity of the schist and limestone soils of the region.

The vineyard is comprised of several plots where traditional grape varieties such as Grenache, Carignan, and Macabeu are cultivated to produce white, red, and sometimes biodynamic wines. The grapes are harvested by hand, and the winemaking process is meticulous to preserve the freshness, minerality, and aromatic expression of each grape variety.
