Laurence and Rémi Dufaitre’s winery stands out in the Beaujolais wine region thanks to its approach that respects the terroir. The vineyards, cultivated organically from the start, produce grapes vinified using the region’s traditional method, with carbonic maceration. Each cuvée receives meticulous care, and the addition of sulfur is minimal, promoting great purity of expression. Their “millefeuilles” vinification, blending Gamay and Chardonnay, yields a unique and captivating wine.

Our Review of the Cuvée

This remarkable wine from Laurence and Rémi Dufaitre is as surprising as it is captivating. Its "blouge" profile is intriguing, falling somewhere between red, white, and rosé. Upon opening, the nose is bewildering, with shifting aromas that defy conventional expectations. On the palate, it offers a harmonious texture and a rich palette of flavors. The blend of Gamay and Chardonnay creates a rich interplay, revealing notes that are both fruity and floral, with a pleasantly long and complex finish. This wine invites exploration and discovery.

Beaujolais | France

In Saint-Étienne-des-Ouillères, in the heart of the Beaujolais region, Laurence and Rémi Dufaitre have been running their estate as an organic vineyard since 2006. The vineyards, spread across Brouilly and neighboring appellations, are tended with constant attention to the soil and the balance of each plot. The setting is simple, rural, and unpretentious—much like the wines produced here.

The estate’s operations are built on a true synergy. Rémi, who is deeply involved in technical decisions and winemaking, raises the bar for quality and precision. Laurence, who is just as hands-on, ensures continuity in the work and manages day-to-day operations. Together, they are gradually upgrading the production facilities, notably with the arrival of a new winery in 2020, designed to enhance functionality without losing the artisanal spirit.

The winemaking process follows Beaujolais tradition, featuring carefully controlled carbonic maceration. Aging varies depending on the cuvée and vintage, always with the aim of complementing the wine rather than ... Read more
