In Saint-Étienne-des-Ouillères, in the heart of the Beaujolais region, Laurence and Rémi Dufaitre have been running their estate as an organic vineyard since 2006. The vineyards, spread across Brouilly and neighboring appellations, are tended with constant attention to the soil and the balance of each plot. The setting is simple, rural, and unpretentious—much like the wines produced here.

The estate’s operations are built on a true synergy. Rémi, who is deeply involved in technical decisions and winemaking, raises the bar for quality and precision. Laurence, who is just as hands-on, ensures continuity in the work and manages day-to-day operations. Together, they are gradually upgrading the production facilities, notably with the arrival of a new winery in 2020, designed to enhance functionality without losing the artisanal spirit.

The winemaking process follows Beaujolais tradition, featuring carefully controlled carbonic maceration. Aging varies by cuvée and vintage, always with the aim of complementing the wine rather than altering it. Sulfur additions are kept to a minimum—sometimes none at all—and are used only when necessary to ensure the wine’s stability.

The wines of Domaine Dufaitre offer clean, lively profiles that are often very expressive in their fruitiness, with an immediate drinkability that never feels exaggerated. A sincere, precise style that reflects both the terroirs of Beaujolais and the personalities of those who cultivate them.
