Petraea Champagne is a unique cuvée crafted using a Solera-inspired method, where each vintage contributes to a perpetual reserve. Made exclusively with the first pressing, this cuvée is cultivated on a siliceous-limestone terroir in the Massif de Saint-Thierry. The process includes spontaneous fermentation with indigenous yeasts, aging on fine lees with bâtonnage (lees stirring), and malolactic fermentation, all while avoiding fining and filtration for a natural expression.
