This 35-hectare estate, nestled in the heart of the Malepère massif, has cultivated exclusively Merlot using organic farming methods since 2013. The terroir, situated between 250 and 400 meters above sea level, benefits from both Atlantic and Mediterranean influences, giving the wines a supple aromatic profile. Cold pre-fermentation fermentation, followed by a short maceration, helps preserve the aromas, resulting in a delicious and approachable wine with low sulfite levels.

Our opinion on the vintage

From the first glance, the deep garnet robe invites exploration. The nose immediately charms with aromas of candied raspberry and blackberry, enhanced by notes of violet and a touch of spice. On the palate, a fine, velvety texture unfolds elegantly, while the flavors of ripe fruit mingle delicately with menthol and balsamic nuances. This Merlot strikes a balance between crispness and a touch of mischief, offering a flavorful finish where cherry, cocoa, and mint intertwine. An easy-drinking wine, perfect with duck confit or cassoulet.

Located in Malviès, between Limoux and Carcassonne, Château Guilhem has been a family estate since 1878, now run by the fifth generation. The estate covers approximately 35 hectares of vines, cultivated organically, grouped around the property and backing onto the Malepère massif, in western Languedoc.

This area stands out from the rest of the region due to its cooler climate, influenced by its proximity to the Pyrenees. This distinctive characteristic is reflected in the estate's grape varieties, deliberately chosen for their Atlantic influence: Merlot, Cabernet Sauvignon, and Malbec. This selection gives the wines a unique profile within the Languedoc landscape, often referred to as "the other Languedoc," where freshness and structure take precedence over intense sunlight.
