Upon opening, this naturally sparkling wine surprises with its captivating nose, a blend of candied red berries and sweet spices. On the palate, roundness and breadth unfold with an invigorating freshness, enlivened by a myriad of micro-bubbles. Raspberry asserts itself with irresistible intensity, enhanced by notes of white pepper. The finish, slightly chalky and pleasantly bitter, evokes candied orange peel and a hint of quinine, while maintaining the dominant raspberry, lively and invigorating to the very last note.

After an experience steeped in Champagne-style winemaking, Jean-Louis Denois identified favorable conditions for growing Pinot Noir and Chardonnay on certain hillsides of Languedoc. Altitude, exposure, and soil type provide an environment conducive to the expression of these grape varieties, rarely associated with the region.

The winemaking process favors a measured approach, focused on freshness and aromatic precision rather than the pursuit of power.
