Organically grown on high-altitude clay-limestone soils in the Upper Aude Valley, it guarantees uncompromising quality. Hand-harvested to preserve the integrity of the grapes, it benefits from meticulous vinification without sulfites, aging in 10-year-old demi-muids (600-liter barrels) to impart richness and depth, before bottle aging to ensure its elegance.
