Jean-Louis Denois

Pet'Nat Nature without added SO2

Blanquette de Limoux | White | NM

This Brut Nature from Jean-Louis Denois stands out for its meticulous winemaking. Made without added sugar or sulfites, it is crafted from Mauzac grapes grown in the Upper Aude Valley. Using a traditional method that prioritizes a single fermentation, this wine captures freshness and lightness thanks to a short aging period on its lees. It offers an unchaptalized and undosed alternative, ideal for moments of pure summer enjoyment.

Our opinion on the vintage

Visually, this wine reveals a pale, almost silvery gold hue, enlivened by fine, persistent bubbles. The first impression on the nose is delicate aromas of lemon zest, green apple, and damp chalk. On the palate, vivacity takes center stage, thanks to invigorating micro-bubbles that harmoniously envelop the palate. The finish, energetic and refreshing, seduces with its citric acidity, a slight astringency reminiscent of chalk, and a subtle bitterness of lemon pulp and grapefruit peel. A fascinating wine in its complexity, yet remarkably approachable and thirst-quenching.

Jean-Louis Denois

Jean-Louis Denois

Languedoc | France

After an experience steeped in Champagne-style winemaking, Jean-Louis Denois identified favorable conditions for growing Pinot Noir and Chardonnay on certain hillsides of Languedoc. Altitude, exposure, and soil type provide an environment conducive to the expression of these grape varieties, rarely associated with the region.

The winemaking process favors a measured approach, focused on freshness and aromatic precision rather than the pursuit of power. The white wines retain a marked tension, supported by discreet mineral expressions, while the reds are built on gentle extractions, resulting in fine and well-integrated tannins.

The winemaking process remains restrained and tailored to each vintage, with the aim of complementing the wine without influencing its character. The result is a balanced and coherent expression of these Languedoc terroirs, emphasizing precision and clarity rather than a demonstrative interpretation.
