Based in Burgundy, the Archipel workshop produces gourmet kombucha. Pierre, who holds a Ph.D. in chemistry and is a co-founder, oversees fermentation processes that are consistently high-quality and have been praised by head sommeliers.
The company works with French fruit growers and uses the leaves from their fruit trees (fig, blackcurrant, and raspberry). This provides them with additional income and serves as a distinctive aromatic signature for Archipel.
Stable at room temperature and free of added preservatives, Archipel kombuchas do not require refrigeration. They can be found at L'Arpège, Le V, Maison Pic, and The Peninsula.
