In Languedoc, the Aubert & Mathieu project is spearheaded by Jean-Charles and Anthony, with the aim of offering accessible, clear, and contemporary wines. Their work is based on selecting grapes from various Languedoc sectors, chosen for their ability to yield balanced and expressive profiles.

The cuvées prioritize fruit-forward, fresh, and drinkable expressions, with vinifications conducted to preserve aromatic clarity and supple structures. Extractions remain moderate, and aging is tailored to each wine, without seeking overt oak influence, to maintain straightforward and approachable profiles.

The project is part of a committed approach, featuring certified organic wines and careful attention to production conditions. Aubert & Mathieu also advocates for a holistic consideration of environmental impact and model consistency, notably evidenced by B Corp certification.

The entire range offers a straightforward, contemporary take on the Languedoc vineyards, featuring wines that are well-defined, approachable, and consistent—designed to be enjoyed without pretension, yet without compromising on quality.
