The meticulous winemaking process for this wine relies on direct pressing, combining destemmed and whole-cluster fermentation. Controlled fermentation in stainless steel tanks, barrels, and large oak casks allows the full aromatic complexity of its grape varieties, particularly Sauvignon Blanc and Chardonnay, to be revealed. Aged for six months, this wine offers a harmonious balance of freshness and roundness, enhanced by its origin in clay-limestone slopes and its commitment to no added sulfites.

From its brilliant golden hue, this wine captivates with its allure. The nose opens with an expressive bouquet of pineapple, butter-roasted peach, and honeysuckle notes complemented by a subtle smoky touch. On the palate, it is both lively and elegant, structured around a pronounced acidity that underscores a round and ripe texture, evoking the sensation of biting into a Victoria pineapple. A slight effervescence enhances its vibrancy. The finish impresses with its vibrant tension, its noble bitterness of candied citrus peel, and an aromatic persistence of pineapple and passion fruit, offering a bold and elegant tasting experience.

In Cahors, Fabien Jouves manages Mas del Périé with a precise, plot-by-plot approach to Malbec. The different cuvées are based on the geology of the plateau and hillsides, contrasting limestone soils, which bring verticality and tension, with deeper clays, sources of flesh and density.

Biodynamics structures all the work, from soil management to winemaking. Aging uses a variety of containers—amphorae, foudres, and barrels—employed as tools for adjustment, in order to refine the profiles without masking the expression of the grape or the terroir.

The wines maintain a clear definition, with precise black fruit and structures that are never heavy. The finishes remain legible and balanced, reflecting an approach where each cuvée offers a distinct and coherent interpretation of the different facets of the Cahors plateau.
