Seventy percent of the grapes are destemmed to preserve the purity of the fruit, then undergo natural fermentation with indigenous yeasts, guaranteeing an authentic expression. Aged for 12 months in oak barrels, 30% of which are new, it develops a subtle complexity before elegantly harmonizing its aromas during a four-month stay in old demi-muids. This painstaking process imparts a captivating and harmonious texture.
