Located in Mercurey, about thirty kilometers from Beaune, the Domaine de Cardon is part of an ancient history, brought back into motion since 2013. The estate is now run by an association of enthusiasts who wanted to revive the lands of the Cardon family, based on a precise reading of the terroirs of the Côte Chalonnaise.
The vineyard covers approximately 15 hectares, primarily located within the Mercurey and Mercurey Premier Cru appellations, with a typical Burgundian grape variety: Pinot Noir, Chardonnay, and Aligoté. The plots are predominantly situated on clay-limestone soils, characteristic of the region, which promote structured balance and a clear expression of the grape varieties. The estate also cultivates Gamay on granitic soils in the Chiroubles area, offering a complementary perspective on the vineyard.
Vineyard management prioritizes a meticulous, plot-by-plot approach, with particular attention paid to grape ripeness and the coherence of the blends. The wines are predominantly single-varietal, in order to preserve the expression of the terroirs and the typicity of the appellations. Yields are controlled to guarantee concentration and balance, without seeking excess.
In the cellar, winemaking is carried out with restraint, guided by a philosophy of respecting the integrity of the grapes. Extractions are carefully measured to preserve the finesse of the tannins, particularly in the Pinot Noir, while aging is designed to structure the wines without masking the fruit or the character of the vineyard plots. The white wines emphasize tension and precision, with a faithful expression of the limestone soils of Mercurey.
Domaine de Cardon offers a serious and coherent interpretation of the Côte Chalonnaise, blending Burgundian tradition with the vineyard's recent revitalization.
