Domaine du Salut

Located on the Cérons plateau, in the historic heart of the Graves region, Domaine du Salut has been run by Aurélia and Frédéric since 2015. The vineyard is planted on sandy-gravel soils—which drain very well—formed from the former bed of a tributary of the Garonne River, with a nutrient-rich subsoil and naturally high biological activity.
As soon as they settled in, the couple adopted a structured environmental approach. The white wine plots are planted with cover crops (oats, vetch, clover) to enrich the soil with organic matter and promote natural nitrogen fixation, which contributes to the grapes’ aromatic development. No herbicides are used: soil management prioritizes traditional mechanical practices adapted to the nature of the plots. The estate has been Terra Vitis certified since 2015 and converted to organic farming as of 2020.
Harvesting is primarily done mechanically, with the exception of the sweet wines, which are harvested by hand to ensure careful selection of the grapes. Viticultural decisions are aimed at achieving optimal ripeness and a direct expression of the fruit, without seeking excessive concentration. Vineyard management is guided by a commitment to harmony between agricultural practices, the natural environment, and the desired wine style.
In the cellar, winemaking practices are designed to preserve the wines’ clarity and drinkability. Extraction is kept moderate and aging is subtle, in order to maintain accessible, balanced profiles. The wines emphasize aromatic freshness, a supple structure, and a clean finish, with a deliberately simple and approachable style.
Domaine du Salut thus offers a contemporary take on the Graves region, breaking with certain traditional Bordeaux conventions. The wines offer a direct expression of the Cérons terroir, designed for immediate enjoyment and sharing, while grounded in serious and consistent winemaking choices. A discreet yet distinctive estate that embraces an unpretentious approach to wine without compromising on quality or respect for the environment.
