The production of this Chardonnay begins with a meticulous, hand-harvest to ensure the grapes are handled with care. The grapes are then gently pressed as whole clusters to extract a clear, pure juice. Aging in oak barrels for 18 months enhances the aromatic nuances while adding structure and texture to the wine. This process, carried out without any oenological additives, ensures an authentic expression of the clay-limestone terroir and the southeast exposure.

Our Review of the Cuvée

Visually, this Chardonnay boasts an alluring jasmine-yellow hue. On the nose, it unfolds inviting aromas of white flowers and citrus, creating a fresh, spring-like first impression. From the very first sip, the palate reveals floral notes accompanied by hints of brioche, resulting in a texture that is both velvety and surprising. The flavors blend harmoniously, offering a complexity that pairs perfectly with savory dishes such as pan-seared foie gras with apples or Bresse chicken with morel mushrooms.
