The Bourboulenc from La Clape, grown on clay-siliceous soils with a history of salt marshes, offers a unique experience thanks to its sustainable cultivation practices. These 40-year-old vines are pruned using the Royat method, and a density of approximately 4,000 vines per hectare ensures optimal quality. Vinification begins with gentle pressing and continues with a carefully orchestrated fermentation, divided between tanks and new American oak barrels, followed by aging on the lees.
