Since the founding father François Gilbert, who chose viticulture in 1768, the Gilbert family has always made wine. My grain of salt was the conversion of the entire estate to organic and especially biodynamic farming between 2005 and 2007. We seek the deep balance of the plant which is in harmony with nature. The ageing time is long enough (one year in white almost two years in red), in order not to disturb the natural rhythm of the wine.
The estate's latest news is the launch of the "Vino-lok" glass stopper on all vintages, starting with the 2014 Menetou-Salon blanc.
