My grain of salt was the conversion of the whole estate to organic and especially to bio-dynamic farming, between 2005 and 2007. We look for the deep balance of the plant which is in harmony with nature. The maturation time is quite long (one year for white wine and two for red wine), in order not to disturb the natural rhythm of the wine.
The domain's short story
Since the founding father François Gilbert, who chose viticulture in 1768, the Gilbert family has always made wine. The 29 hectares of the property are planted on hillsides, with equal amounts of Sauvignon and Pinot Noir, on sedimentary soils from the Kimmeridgian era, a soil of marl, clay and limestone. The domain is managed by Philippe Gilbert and is operated in biodynamic farming.
