Originally from Alsace, Barbara and Pierre fell in love with the Minervois region while traveling through the French vineyards in their motor home. They settled there in December 2015 and created their 15-hectare estate of organically grown vines. Pierre has been an oenologist for more than 20 years and produces authentic and original wines, in the colors of the expressive Minervois terroir.
Close to the medieval city of Carcassonne, the organic estate, located at the foot of the hills of Laure-Minervois in the heart of the Languedoc region, covers more than 15 hectares, 5 hectares in the Minervois Protected Designation of Origin (PDO) and 10 hectares in the Protected Geographical Indication (PGI). Surrounded by garrigues and pine forests, the vines are grown on the clay-limestone soils of the Minervois in organic agriculture, Viognier, Chardonnay, Syrah, Grenache and Carignan are grown.
December 2015: it is with a touch of madness that Barbara and Pierre leave their native Alsace and create the Domaine SIBILLE in Laure-Minervois in the Aude, in the Occitanie region. On the basis of a small estate in organic farming at the foot of the Black Mountains, we took over and worked a little more than 15 hectares of vines: 5.2 hectares in the Minervois Protected Designation of Origin (PDO) and 10 hectares in the Protected Geographical Indication (PGI). It is a real challenge to achieve the alchemy between the vine and our wines, for this we rely on the experience of Pierre, an experienced oenologist with over twenty years of winemaking in his hands. The soil is essentially sandstone, which brings freshness and structure to the wines. Only the Viognier and Chardonnay Pays d'Oc (in conversion) are on clay-limestone soils. The vineyard expresses itself through several grape varieties: Red and Rosé: Grenache for power, old Carignan for authenticity, Syrah for finesse, Mourvèdre for its wild character, Merlot for its roundness, Marselan for originality and discovery. White : Viognier and Roussanne for the fruit, Chardonnay for the freshness. We favour manual harvesting for the reds, gravity work, reduction of sulfites and for the whites, maturing on the lees to naturally give fatness and depth to our wines. Our labels are different and colorful; once combined, they form a fresco on the six bottles: they express our link to the land!
Our philosophy is to make the estate a place of exchange and sharing, during the renovation work we have set up a cottage for 4 people, an air of camper van for our friends travellers so that they can enjoy the landscapes of character of the Minervois.
