The domain's short story
Located at the foot of the Laure-Minervois hills in the Languedoc region, close to the medieval city of Carcassonne, this organically-farmed estate extends over 15 hectares, 5 hectares with the Minervois Protected Designation of Origin (PDO) and 10 hectares with the Protected Geographical Indication (PGI). Surrounded by garrigues and pine forests, the vines are grown on the clay-limestone soils of the Minervoi region in organic farming, and include Viognier, Chardonnay, Syrah, Grenache and Carignan grapes. December 2015: it was with a touch of madness that Barbara and Pierre left their native Alsace to set up Domaine SIBILLE in Laure-Minervois in the Aude region of Occitanie. Based on a small organic estate in the foothills of the Black Mountains, we took over and worked just over 15 hectares of vines: 5.2 hectares in Appellation d'Origine Protégé Minervois (AOP) and 10 hectares in Indication Géographique Protégée (IGP). It's a real challenge to achieve the right alchemy between the vines and our cuvées, and for this we rely on the experience of Pierre, an experienced oenologist with over twenty years of winemaking under his belt. The soil is essentially sandstone, which brings freshness and structure to the wines. Only the Viognier and Chardonnay Pays d'Oc (in conversion) are grown on clay-limestone soils: Grenache for power, old Carignan for authenticity, Syrah for finesse, Mourvèdre for its wild character, Merlot for its roundness, Marselan for originality and discovery. White: Viognier and Roussanne for fruit, Chardonnay for freshness. For our red wines, we prefer to harvest by hand, work with gravity, reduce sulfites and, for our white wines, age on total lees to naturally give our wines fatness and depth. Our packaging is designed to be different and colorful; once combined, they form a fresco on the six bottles: they express our link to the terroir!
