


The vines of Cabardès grow in a natural theatre steeped in history: near Carcassonne, leaning against the Montagne Noire, where the first shovel was used to dig the Canal du Midi… The crusades passed, the invaders were repelled, the vines of Cabernet-sauvignon, Grenache noir, Merlot, Shiraz and Syrah, they remained!
Today, they produce nearly 30,000 hectolitres of red and rosé wine. The 450 hectares of vines are south-facing and benefit from the irrigation of no less than six tributaries! The soils are made of limestone.
These wines from the land of the sun reflect this characteristic in the mouth: they are wines with delicate but present tannins, the colour is sustained, and takes on orange hues with time. candied fruit and prunes are notable, even in young wines, on the nose.
