The very special soils of chalk, tufa, clay and limestone near the hillside give the wine its character and structure, as well as its early character with rapid warming.
From tufs, the wine for ageing is about 5 years old. Depending on the terroir and the vinification, the wines are known for their finesse and great aromatic richness. Cabernet franc (or "Breton") mainly, cabernet sauvignon to accompany it, the wines of Saint Nicolas de Bourgueil are very dark in colour, sometimes with purple tints. As we age, we get closer to garnet with tile tones. On the nose, the wine breathes aromas of red fruits (raspberries), violets, blackberries and liquorice with a hint of spices. On the palate, one can feel its roundness and fleshy character with fruity notes. Rosé wines bring freshness and elegance. They are silky, remarkable and are perfect as an aperitif or with a red fruit dessert. Red is at its best when served with meat or chocolate dessert.
