Nos vins de Banyuls
Tous les vignerons de BanyulsC’est à l’extrême sud de la France Métropolitaine que les vins de Banyuls sont élevés. Majoritairement rouges et rosés, parfois ambrés, il existe cependant dans ce terroir une petite parcelle dédiée au vin blanc. Les cépages les plus utilisés de cette région viticole sont le grenache noir, le grenache gris, le carignan, la syrah et le cinsault.
Région viticole prestigieuse, la raison profite des conditions exceptionnelles de développement avec le souffle de la tramontane pour adoucir la chaleur du soleil. Ce vin doux naturel est élevé sur 1150 hectares pour un rendement annuel de 25 700 hectolitres. Les fortes pentes de schistes ont été transformées par les vignerons en des terrasses très étroites, sous un climat méditerranéen. Le vin rosé est à boire jeune mais les rouges et blancs peuvent se conserver. Les rouges sont divisés en trois types : le traditionnel, le “rimage” (élaboré sur des grands millésimes) avec une rapide mise en bouteille, et le Banyuls Grand Cru disposant d'une garde beaucoup plus longue. Le rouge offre une palette de rouges foncés, tuilé, rubis ou acajou. Le nez est toujours puissant et révèle des parfums de cerise, de mûre, de fruits rouges ou de pruneau. Chacun développe son bouquet, mais en se laissant vieillir, ils évoluent tous en goût. En bouche le Banyuls est d’une longueur exceptionnelle et en se bonifiant avec l’âge on distingue des arômes de torréfaction, d’eau de vie ou de fruits secs. Les vins blancs eux ont un nez floral et une bouche d’agrumes.
