Everything You Need to Know About Domaine Sibille
Domaine Sibille
In 2015, Pierre and Barbara Sibille left their native Alsace to start a new chapter in the heart of Languedoc. They settled in Laure-Minervois, in the Aude department, and took over a vineyard of about fifteen hectares at the foot of the Montagne Noire. A trained oenologist, Pierre brings more than twenty years of experience working at a cooperative winery, while Barbara is training in viticulture so that together they can build their project.
Domaine Sibille is now farmed organically on land characterized by sandstone and clay-limestone soils. Here, the vines benefit from a Mediterranean climate and a landscape typical of the Minervois region, set among scrubland, pine trees, and rolling hills. Grenache, Syrah, Carignan, Mourvèdre, Viognier, Chardonnay, and Roussanne make up a range that includes reds, rosés, and whites.
Both in the winery and in the vineyard, Pierre and Barbara seek above all to express the character of the grapes and the terroir. Harvesting is done primarily by hand, and gravity-fed processes are prioritized to preserve the integrity of the grapes as much as possible. Winemaking is kept to a minimum, with controlled use of sulfur and no aging in wood for certain vintages.
From the Minervois to the Pays d’Oc PGI, the wines of Domaine Sibille showcase freshness, fruitiness, and precision, while retaining the sunny character of the Languedoc. A family venture born of a radical life change, now deeply rooted in a terroir that they have chosen to bring to life in a new way.
