Domaine Gauby

Domaine Gauby is a winery located in Calce, within the Côtes du Roussillon Villages appellation in the heart of Roussillon. It was founded by Gérard Gauby and is now run with the help of his son, Lionel. The estate is renowned for its biodynamic and organic practices, which highlight old vines planted on diverse limestone and schist soils that impart great richness to the grapes.

The wines are produced using minimal intervention, with fermentation using native yeasts and vinification in traditional materials such as concrete and wood, without chaptalization or filtration. This approach results in deep, elegant, and highly expressive red, white, and rosé wines.

Gauby wines are renowned for their finesse, aromatic complexity, and ability to faithfully reflect the Roussillon terroir, particularly in wines made from old vines and historic plots.
