Domaine Gauby is a wine estate located in Calce, in the Côtes du Roussillon Villages appellation in the heart of the Roussillon region. Founded by Gérard Gauby, it is now run with the participation of his son, Lionel. The estate is renowned for its biodynamic and organic practices, cultivating old vines planted in diverse limestone and schist soils that impart great richness to the grapes.

Viticulture is carried out with minimal intervention, using indigenous yeasts for fermentation and vinification in traditional materials such as concrete and wood, without chaptalization or filtration. This approach results in deep, elegant, and highly expressive red, white, and rosé wines.

Gauby wines are renowned for their finesse, aromatic complexity and ability to faithfully reflect the Roussillon terroir, particularly in cuvées made from old vines and historic plots.
