This Malbec, grown on ferruginous limestone soils at an altitude of 350 meters, benefits from a natural winemaking process that fully respects the fruit. The hand-harvested grapes are carefully destemmed before undergoing a 30-day maceration and fermentation in egg-shaped tanks, thus preserving the authentic aromas of the grape variety. Aging for 18 months in egg-shaped tanks results in a harmonious and silky texture.

In Cahors, Fabien Jouves manages Mas del Périé with a precise, plot-by-plot approach to Malbec. The different cuvées are based on the geology of the plateau and hillsides, contrasting limestone soils, which bring verticality and tension, with deeper clays, sources of flesh and density.

Biodynamics structures all the work, from soil management to winemaking. Aging uses a variety of containers—amphorae, foudres, and barrels—employed as tools for adjustment, in order to refine the profiles without masking the expression of the grape or the terroir.

The wines maintain a clear definition, with precise black fruit and structures that are never heavy. The finishes remain legible and balanced, reflecting an approach where each cuvée offers a distinct and coherent interpretation of the different facets of the Cahors plateau.
