Ether Rosé 2024

Vin de France | Rosé | 2024

A structured and complex rosé made from Merlot (50%) harvested using the saignée method and Cabernet Sauvignon (50%) harvested by pressing. In keeping with the estate’s philosophy, this cuvée emphasizes a fresh, fruity, and natural expression of the grape, with a light and airy style.

The Merlot free-run juice adds roundness and richness, while the Cabernet Sauvignon pressed juice brings liveliness and freshness. The wine was stirred on the full lees for 2 weeks and aged on fine lees for 2 months.

Serve well chilled as an aperitif or with summer dishes: salads, grilled meats, vegetables, fish, or Mediterranean cuisine.

Our Review of the Cuvée

A bright, pale pink color. The nose reveals fresh notes of red berries, dominated by strawberry and raspberry.

On the palate, the attack is lively and light, with crisp fruitiness and a very refreshing sensation. The texture remains supple and smooth, supported by lovely freshness. The clean, fruity finish naturally invites you to take another sip.

A fresh, delicious, and easy-to-drink rosé, ideal for sunny days and social gatherings.

Quercus Alta

Quercus Alta

Quercus Alta is a young winery located on the La Mondette estate, on the outskirts of the Dordogne region, near Saint-Émilion and Bordeaux. Born out of a desire to create wines on a human scale, the estate champions an artisanal approach to viticulture, based on respect for living organisms, precision, and the pursuit of fresh, balanced, and authentic wines.

The driving force behind the project, Baptiste—a trained oenologist—forged his career path without relying on a family winemaking heritage. After studying viticulture and oenology, he gained valuable experience working at wineries in France and abroad, notably in Italy, Chile, and Greece. These diverse experiences now shape his vision of wine: to observe, understand, and work with the raw material rather than seeking to transform it.
