Anecdotes about the domain
As the grandson of a wine merchant, wine held a predominant place in Dominique's family life. After studying mechanical engineering, he studied viticulture and oenology for his pleasure. But the passion was born and an opportunity opened up in Epineuil and Dominique and his father challenged themselves to take over a small vineyard and an exceptional 13th century building. The work is immense and 25 years later, this field is a reference.

The domain's short story
The adventure began in 1990 on a vineyard undergoing renewal. One white canvas and two colours: yellow and red, and many shades. And it is with my three grape varieties (Chardonnay, Pinot gris and Pinot noir) that year after year I have learned to discover my terroirs and helped to reveal them. I like gourmet, delicate, precise, vibrant, digestible and deep wines and this is what I strive to do at the Domaine. my goal is to make wines of immediate pleasure that can nevertheless be aged in the cellar for many years. I adapt my vinification to each vintage with the help of my oenologist friend Benoit and Rémy, my vineyard manager. Each terroir is vinified separately and we taste the wines every day during this exhilarating period. 2006, I tried bubbles and I made my first crémants. It's a completely different profession than still wine and I love it just as much. It is extremely stimulating and I have soils that lend themselves perfectly well to it! I do not use any inputs in my wines, and the doses of sulphites are minimalist. Always the same objective: pleasure, pleasure, pleasure, pleasure! Cheers, happiness!
The winemaker's pride
Magnificent wine estate in a sumptuous Cistercian outbuilding from the 13th century. One of the most qualitative references of the Yonne, totally in organic culture. The vines are deeply rooted in the famous Kimmeridge limestone soil and draw mineral elements that bring finesse and freshness to both Chardonnay and Pinot Noir. The range of Dominique's wines extends from Chablis to Epineuil through Burgundy Tonnerre without forgetting his excellent crémant.
