The domain's short story
Guillaume spared no effort in restoring the vineyard to health and obtaining the certifying labels. When he took over the vineyard, the soil had not been worked for over 30 years and was therefore very hard. The vines weren't very cooperative either, and couldn't bear to have their superficial roots cut at first. Today, thanks to Guillaume's hard work, the vineyard yields are regular and the soil is in great shape. He has opted for natural grassing between the rows, taking care to mow only once before the harvest to allow the species to develop and preserve the balance of the terroir. Soil ploughing, de-budding, de-sucking and manual harvesting are all part of the process to obtain top-quality wines. IN 2015, Guillaume breathed new life into his estate by planting Pineau d'Aunis and Grolleau Gris, rare and forgotten grape varieties native to the Saumur region.
