Champagne Philipponnat Champagne Philipponnat Sublime Reserve - Pétillant - 2008
This wine has a pale gold colour. The bubbles are abundant, elegant and fluid. The Nose is expressive of yellow fruits: apricot, mango, pear and apple tree frog. In a second stage, notes of toasted bread and honey develop. The attack is airy and balanced, with notes of floral honey and other notes of magnified candied white fruits. The palate is complex, long, and with a vanilla finish.
The word of the Winemaker, Charles Philipponnat :
The fruity aromas of a vintage champagne dosed the old-fashioned way.

Tasting
When ?
This wine has been aged in an optimal cellar, to be enjoyed immediately. It will keep without damage for three years under the conditions of a suitable cellar and will then evolve towards even more roundness and honeyed aromas.
How ?
Perfect with smooth dishes: foie gras, meat, poultry prepared with dried or fresh fruit. But it is also perfect with oriental cuisine (sweet and sour sauces) and light desserts (fruit pies, nougat). Serve slightly chilled, between 8 and 10°C.
