The "Traditional Method", or "Champenoise Method", consists of a first fermentation in vats and then in the bottle. The gas produced by this fermentation mixes with the wine and transforms into fine bubbles. This second fermentation takes place for 3 years in the château's large tufa cellars. The wine keeps its fruity side, its balance and its very pleasant roundness.
