Domaine Bonnardot

Santenay white Sous la Roche 2022

Santenay | White | 2022

This Santenay Blanc "Sous la Roche" from Domaine Bonnardot is made from 100% Chardonnay grapes grown on a southeast-facing clay-limestone terroir in the Côte de Beaune. The grapes are hand-harvested, gently pressed as whole bunches, fermented in barrels with natural yeasts, and aged for 12 months on the lees, followed by 6 months in stainless steel tanks before light bottling. The wine displays aromatic purity and vibrant energy.

Our opinion on the vintage

The wine opens with a beautiful jasmine-yellow hue, immediately revealing its finesse. On the nose, aromas of citrus, ripe yellow fruits, and lightly toasted notes mingle harmoniously, offering a fresh and seductive aromatic expression. On the palate, the wine charms with its round and fruity texture, enriched with brioche notes and an elegant minerality, typical of the limestone terroir of Santenay. This is a white Burgundy that is at once fresh, luscious, and balanced, perfect for pairing with snail casseroles, scallops with leek fondue, or a fillet of pike-perch with cream sauce.

Domaine Bonnardot

Domaine Bonnardot

Bourgogne | France

In Burgundy, Domaine Bonnardot relies on a portfolio of vineyards spread between the Côte de Nuits and the Côte de Beaune. This diversity of locations allows them to work with Pinot Noir and Chardonnay in varied soil and exposure contexts, with constant attention paid to the unique character of each origin.

Winemaking prioritizes gentle extraction to preserve the finesse of the textures and the purity of the fruit. Aging is carried out with restraint, striving for a balance between structure and suppleness, without attempting to overpower the wines. This approach allows the wines to retain a precise structure and natural vibrancy, characteristic of these areas of Burgundy.

The entire process aims for consistency and clarity, with precise and balanced wines, built to express their terroir and evolve harmoniously over time.
