Domaine Bonnardot

Santenay white St Jean 2021

Santenay | White | 2021

This Chardonnay comes from a beautiful south-facing plot with stony, clay-limestone soil. The 40-year-old vines, cultivated without herbicides and using organic practices, express their richness. Harvested by hand, the grapes are carefully pressed to encourage fermentation in barrel. The wine is aged for 12 months in oak barrels, allowing for natural settling before a light filtration to preserve its integrity.

Our opinion on the vintage

On the nose, this Chardonnay offers a seductive bouquet of citrus and yellow fruit notes, enhanced by toasty hints. On the palate, the fruity aromas are accompanied by an elegant brioche touch, lending a sensation of roundness and subtlety. The texture is silky, offering a beautiful length on the finish. With its harmonious profile, this wine pairs wonderfully with refined dishes such as scallops with leek fondue or pike-perch fillet with cream sauce, revealing its depth and finesse.

Domaine Bonnardot

Domaine Bonnardot

Bourgogne | France

In Burgundy, Domaine Bonnardot relies on a portfolio of vineyards spread between the Côte de Nuits and the Côte de Beaune. This diversity of locations allows them to work with Pinot Noir and Chardonnay in varied soil and exposure contexts, with constant attention paid to the unique character of each origin.

Winemaking prioritizes gentle extraction to preserve the finesse of the textures and the purity of the fruit. Aging is carried out with restraint, striving for a balance between structure and suppleness, without attempting to overpower the wines. This approach allows the wines to retain a precise structure and natural vibrancy, characteristic of these areas of Burgundy.

The entire process aims for consistency and clarity, with precise and balanced wines, built to express their terroir and evolve harmoniously over time.
