Boulay's signature is evident in the precision of the Sauvignon from Chavignol's "terres blanches" and "caillottes." The wines display ripe yet restrained fruit, a tapered structure, and the salinity characteristic of the finest Sancerre wines. The highly integrated aging in demi-muids imparts a silky texture without altering the aromatic profile. The single-parcel cuvées — Monts Damnés, La Grande Côte — each express a distinct nuance of slope and exposure. This is one of the most consistent and elegant estates in the village.
