The project is based on close collaboration with partner winemakers who are committed to organic farming and hand-harvesting. The winemaking process follows a clear philosophy: no oenological additives, no added sulfites, and fermentation using native yeasts. The goal is not technical virtuosity, but rather energy, fruitiness, and drinkability, with a deliberate precision underlying the apparent simplicity.
