Mauro is Nadia Verrua's uncle. After a 15-year career in the chemical industry, Mauro changed course and embarked on the production of what he had always been passionate about: traditional Piedmontese aperitifs!

Demanding, Mauro selects the finest natural wines of Piedmont to create his macerations of plants and spices. The common Martini, Campari, and others have obscured the fact that the tradition of Piedmontese bitters dates back to the 18th century and was made with the best wines! For example, the Americano is made with Nadia Verrua's Grignolino, and the Vermouth with Moscato and the traditional Cortese! Each one features a different recipe of plants and spices that gives it its distinctive aromatic character and bitterness.

Our opinion on the vintage

On the nose, Mauro's aperitifs reveal a surprising complexity, blending delicate aromas of Piedmontese herbs with a subtle touch of spice. On the palate, the Americano offers a smooth and balanced texture thanks to the Grignolino grape, while the Vermouth, made with Moscato, captivates with its aromatic richness and finesse. Each sip is a rediscovery of traditional Piedmontese craftsmanship, where bitterness harmonizes perfectly with vegetal and spicy notes for an unparalleled sensory experience.

Chinati Vergano is a winery located in Piedmont, specializing in the production of traditional flavored wines, notably Chinato. The estate is currently run by Tommaso and Pietro Vergano.

Chinato is made from a base of Piedmontese wine, enriched by macerating cinchona bark and a blend of herbs and spices. It is a traditional Piedmontese product, distinct from classic still wines.

I do not have information regarding the size of the vineyard, the precise year the estate was created, or the existence of specific certifications.
