Brice Omont carefully selected grapes grown using organic or in-conversion practices. The winemaking process begins with whole-cluster maceration using naturally occurring yeasts. Aging takes place in a skillfully orchestrated combination of concrete tanks, stainless steel tanks, and neutral oak barrels, allowing the wine to develop a beautiful aromatic complexity while preserving the purity of the Mondeuse grape.
