This organic wine is produced from old vines, over 60 years old, deeply rooted in sun-drenched, degraded granite slopes, characteristic of the appellation. Cultivated as Syrah on stakes (échalas), harvesting is done manually to preserve the optimal quality of the grape clusters, with careful vinification involving partial destemming. Fermentation utilizes indigenous yeasts, and aging continues for 20 months in barrels, ensuring complexity and finesse with a remarkable aging potential.
