With 30 years of experience in Burgundy, Pascal decided to acquire a wine estate in Caunes Minervois at the foot of the Montagne Noire to create his own wines. He decided to buy a Mas surrounded by 20 hectares of vines, islands of holm oak woods and garrigue, on mainly clay-limestone soils with a high level of stoniness, composed of schist, marble and pebbles, which ensure the diversity of the different wines.
Without respect for the vine and its environment, nothing is possible. From the outset, Pascal chose to work the soil and vines by hand and mechanically, respecting biodiversity and essential to the aromatic expression of the different grape varieties. This work also allows for a better understanding of the plant and the impact of the climate on it. Concerned with discovering each grape variety and each terroir that makes up his estate, Pascal carries out a vinification and maturing process that is carried out on a parcel-by-parcel basis until the moment of blending.
