The estate, commonly known as Château Saint Salvadou, is located near the town of Bouriège and covers more than 10 hectares. The Limoux region benefits from a fresh and mild climate that produces fragrant and delicate wines, and the following grape varieties are cultivated: Chardonnay, Mauzac and Pinot Noir. The vines are treated without inputs or chemicals, in organic farming. The fruits are harvested by hand and the production process is long enough to produce quality wines such as our crémant blanc, the estate's flagship cuvée.
Previously, the grapes were intended for sale to the local cooperative, in 2011, I decided to leave the cooperative to produce and sell my own wine. At the age of 30, I am trying to give a second wind to the Languedoc-Roussillon region by offering quality wines that are very easy to drink at the table.
The crémant de Limoux is considered to be the first sparkling wine in the world, it was in 1531 that the monks of the abbey of Saint-Hilbaire produced a white wine that naturally became sparkling.
