Its fine foam comes from a second fermentation in the bottle after which it rests for at least 15 months on fine lees in the cool shade of our cellars. It thus acquires a particular bouquet which will seduce you pleasantly.

The word of the Winemaker, :

The so-called "ancestral" method is used for all our traditional method vintages. The basic wines are harvested between 12.5° and 13.00°. These wines are vinified in demi-sec to keep about 20 grams of residual sugar necessary for the second fermentation in the bottle.

The Wine Estate

Located on the borders of Anjou and Saumur, the Domaine du Vieux Pressoir benefits from an exceptional terroir. It produces wines of the Saumur and Saumur - Puy Notre Dame appellations, whose expression reflects the typicality of this terroir. The 26 hectares of the estate are mainly planted with Chenin and Cabernet Franc on two slopes with different terroirs, both of which allow very good water drainage: the Jurassic and the Turonian terroirs.
