The bunches must come from old vines, at least 21 years old, and according to the AOC regulations these wines "must be aged until at least 1 July of the year following the harvest. This corresponds to a period of 9 to 12 months. The wine is matured in oak barrels. The wines produced can be red or white, but the proportion of red is much higher today. Bordeaux Supérieurs Blancs are sweet wines and were much more popular a few years ago.
The reds are made from the same grape varieties as those used for AOC Bordeaux. Cabernet Sauvignon, Cabernet Franc and Merlot. They are often more powerful than AOC Bordeaux and their ageing potential is greater.
To the eye, the reds are a dark ruby colour. The nose delivers aromas of red and black fruits, as well as notes of violet. As it ages, the wine takes on a more woody scent, with leather and mushroom. On the palate, the Bordeaux Supérieur reds are tannic and complex. In white, the eye is golden yellow, with golden and brilliant reflections. The nose offers a complex combination of white flowers, exotic fruits and honey notes. On the palate, these sweet wines are smooth and candied, with a beautiful length.
