Dès le XIIème siècle, la réputation des vins de Champagne a fait le tour du monde et leur prestige ne cesse de grandir. Symbole de l’excellence, il est bu lors de grands évènements.
La fabrication d’une bouteille de Champagne
Produite dans la région éponyme, l’appellation champagne bénéficie d’une AOC au cahier des charges bien précis. En effet, seuls trois cépages principaux sont autorisés: le Chardonnay, le Pinot Noir et le Meunier. Rentre également en compte de multiples facteurs comme la zone de production, la taille de la vigne, le rendement, le degré d’alcool et la maturation.
Pour produire cette appellation d’origine contrôlée, les maisons de champagne de la Vallée de la Marne procèdent à des étapes spécifiques.
En effet, lors des vendanges, les grappes sont obligatoirement récoltées manuellement pour ne pas endommager le produit. Les sols de craie, d’argile et de calcaire permettent aux vignes de s’épanouir; la lumière du soleil se réfléchit sur la vigne, la chaleur est absorbée et l'humidité nécessaire au confort des racines est conservée.
Une fois le raisin pressé, l’assemblage intervient : on mélange les cépages et les cuvées afin d’obtenir la meilleure combinaison. A cette étape, le Champagne est encore un vin tranquille sans les jolies bulles qu’on lui connaît. C’est à l’ajout de la levure que les bulles se créent : cette étape se nomme la “prise de mousse".
Ensuite vient l’étape de la fermentation, la bouteille de champagne va reposer couchée pendant une durée de 15 mois pour les non-millésimés et 3 ans pour les millésimés. On incline ensuite les bouteilles et on les remue afin de diriger les levures mortes vers le goulot.
La dernière étape de la méthode champenoise consiste à déboucher pour retirer les levures et remplacer le liquide perdu par la liqueur de dosage qui fera d’un Champagne un brut, un demi-sec, etc. On attribue cette méthode à Dom Pérignon, mais il s’agit simplement d’une habile stratégie de la marque puisque des écrits parlent de vins de Champagne pétillants avant son arrivée.
Comment reconnaître un bon vin de champagne ?
Pour déguster un champagne comme il se doit, il faut commencer par apprécier sa couleur qui doit se situer dans les jaunes pâle, or ou paille. Il est important d’observer ses bulles également: finesse et régularité font avec la tenue du cordon de mousse les signes d’un grand Champagne.
L’odeur du bouquet doit être agréable et fine. En bouche, on remarque l’acidité du Champagne, parfois excessive ou insuffisante. Le corps pourra quant à lui être lourd, puissant, suffisant ou léger.
Quels sont les différents types de Champagne ?
Acheter du champagne n’est pas compliqué, il suffit de savoir décrypter les étiquettes de bouteilles. Concernant les cépages utilisés tout d’abord. Seuls 3 raisins peuvent être utilisés. Du pinot noir issu d'un raisin noir. Il se distingue par sa saveur poivrée et son odeur de fruits rouges. Ce cépage procure une structure et une puissance particulière à la boisson. Le meunier, un raisin noir également. Ses arômes sont assez similaires à celui du pinot noir.
Ce cépage se distingue par la souplesse et la gourmandise du champagne qui en résulte. Et le chardonnay , un raisin blanc. Délicat, ce champagne surprend notamment par des notes d’agrumes, de noisettes et de fleurs blanches.
Vous avez peut-être déjà croisé les mentions « blanc de blancs », il s’agit d’un champagne issu de l’assemblage de raisins blancs du chardonnay. Le « blanc de noirs », quant à lui, est produit à partir de l’assemblage de cépages rouges (pinot noir et parfois meunier). Enfin, le champagne rosé s’obtient grâce au mélange de vins blanc et rouge, ou par coloration naturelle des peaux du raisin.
Quand et comment savourer cette cuvée spéciale ?
Avec quoi déguster ce Champagne maintenant que sa fabrication n’est plus un secret ? Il existe des Champagnes pour tous les goûts : blanc de blancs, champagne brut, demi-secs et rosés. Mais si vous souhaitez boire du Champagne comme autrefois, dégustez-le avec des biscuits roses de Reims qui étaient trempés dans le verre pour les rendre moelleux !
Et surtout, faites comme Lily Bollinger (directrice historique de la prestigieuse maison Bollinger) : buvez du Champagne seulement quand vous êtes heureux et triste, quand vous êtes seul ou avec des amis, quand vous n’êtes pas pressé et lorsque vous l’êtes. Sinon n’y touchez jamais...sauf si vous avez soif !
