Our estate is located in the commune of Gaillac, which gives its name to the appellation of the same name. We cultivate our 7 hectare vineyard with the greatest respect for the environment and more particularly for the vines. We produce about twenty vintages in white, red and rosé.
Our vineyard is the focus of attention. We process it as naturally as possible and harvest it manually to keep as much as possible of the aromas present in the bunches. The reasoned cultivation allows us to have grapes with interesting maturities that give the wines their fresh and fruity side.
The vineyard's grape varieties are wide and typical of the Southwest: we cultivate Sauvignon Blanc, Loin de l'Oeil, Braucol and Syrah, not to mention all of them.
Andrée and Florentin took over the estate and started working the vines in the 1930s. Their grandparents then bequeathed the vineyard to Jacques, their son, who married Maryse and together they developed the 7 hectares that make up the vineyard.
In 1982, the first bottle of their sweet white cuvée came out and they built their cellar together and with their own hands. Their son, Patrice, is studying viticulture and joins his parents in 1995: he brings new knowledge and methods of vine growing and winemaking. At the beginning of the 2000s, his wife, Nathalie, arrived at the estate and brought a lot with her knowledge from her sommelier studies.
Domaine Vayssette is deeply committed to sustainable agriculture. In partnership with the local Chamber of Agriculture, the estate implements the necessary actions to maintain and develop the ecosystems present in the vineyard: analysis of the evolution of the vine by a specialist, reduction of the inputs imposed on the vine and protection of animal species.
