Everything You Need to Know About White Wines

White wine is the champion of freshness and versatility. Whether as an aperitif, paired with seafood, fish, poultry, or certain cheeses, white wine has that special something that makes it indispensable. But be careful: it’s not just a simple chilled glass for the summer! There’s a wide variety of white wine styles —dry, fruity, aromatic, sweet, sparkling, natural… and each one tells a different story.

How is white wine made?

The winemaking process for white wine is as follows: direct pressing of white grapes. Red or black grapes can also be pressed. This is because the pigments in the skins are what give the juice its color; therefore, by separating the skins from the juice through direct pressing, one obtains clear juice. The winemaking technique has a significant impact on the final style.

  • Dry white wine: gentle pressing, low-temperature fermentation to preserve freshness and fruity aromas.

  • Sweet or dessert white wine: very ripe grapes are used, sometimes left to dry on the vine or after harvest, which concentrates the sugar and aromas.

  • Aromatic white wine: certain grape varieties, such as Muscat and Gewürztraminer, naturally offer intense notes of flowers, fruit, and spices.

  • Sparkling or effervescent white wine: there are several methods. Let’s discuss the most common ones here. It’s possible to produce sparkling wines (with a light effervescence) directly by completing fermentation in the bottle (Pétillant Naturel). The remaining unfermented sugars release carbon dioxide, which is trapped in the bottle. The best-known method is the so-called Champagne method, which involves a second fermentation in the bottle. This method is, of course, used to produce Champagnes, but also Crémants and sparkling appellations such as Vouvray, Montlouis-sur-Loire, and others. Grape Varieties and Their Influence

Each grape variety brings its own character:

  • Chardonnay: From Burgundy to the South of France, it can be crisp and mineral-driven or rich and round, often aged in oak barrels to develop notes of vanilla and butter.

  • Sauvignon Blanc: lively and aromatic, with notes of citrus and white flowers, typical of the Loire region.

  • Chenin: versatile, it can produce fresh, lively wines or sweet, complex wines, often with a mineral character.

  • Riesling: aromatic and mineral, perfect for showcasing the terroir, particularly in Alsace.

  • Muscat: sweet, floral, and fruity, perfect as an aperitif or with dessert.

The Role of Terroir

The terroir—that is, the soil, climate, and exposure—has a huge influence on a wine’s flavor. A Burgundy Chardonnay grown on limestone soils will be crisp and elegant, while a Languedoc Chardonnay grown on sun-exposed clay-limestone soils will yield rounder, more indulgent wines. The Loire produces fresh, aromatic white wines, while Alsace emphasizes aromatic purity and finesse. In the South, the sun concentrates sugars and aromas, resulting in richer, sun-kissed wines.

Food and white wine pairings

White wine is very versatile at the table:

  • Fish and seafood: Choose a dry, crisp white wine to bring out the flavors.

  • Poultry or white meat: an aromatic or slightly oaky white wine will pair perfectly.

  • Mild or soft cheeses: opt for fruity, well-balanced white wines.

  • Desserts or foie gras: this is the realm of sweet or syrupy white wines, with notes of honey, candied fruit, and spices.

Educational anecdote

Did you know that certain regions, such as the Jura, produce oxidative white wines known as Vin Jaune, which resemble orange wines in their complexity and unique aging process?
