Domaine Sauvète : The work of four generations

Located in Monthou sur Cher, in the heart of the Val de Loirevineyards, a few kilometers from the great castles and the Beauval Zoo, the Sauvète family has taken on the mission of bringing their estate to life with passion. These winemakers acquired the property in 1905. Today, we explain to you how they decided to launch themselves into environmentally friendly agriculture.

Authentic wines: a shared ambition

In 1905, Georges Sauvète decided to plant his first vines. Then successively, Roland, his son, and Michel, his grandson, expanded the vineyard between 1930 and 1975. Jérôme, a child of the 4th generation, decided in 1980 to settle with his father Michel in the vineyard.

He married Dominique in 1986, and she joined him in the vineyard. With passion, they build and grow the Domaine. They have a daughter, Mathilde, who in 2020 takes over the reins of the vineyard.

After studying as an agricultural engineer, specializing in viti-oeno, she worked in different French wine regions, such as Côtes du Rhônethe Burgundyand Touraine.

Her real asset? She enjoys working in the vineyards, in the cellars, in visits, in commercial relations... Which makes her a very complete winemaker!

A well-established organization: leave nothing to chance

For a better harvest, the vines must be well treated! The Sauvète family's idea is to farm in a more environmentally friendly way. Their 18 hectares of vines have been certified organic since 20 and for the last 5 years, Mathilde has been moving towards Biodynamics.

The work of the soil is essential in organic agriculture . At the beginning of winter, the soil is ploughed, then the vines are covered with loose soil to protect them from frost. In the spring, the soil is warming up and it clears the vines from the protective earth. During the summer, the "cavaillon" is kept clean thanks to several mechanical hoeings. All this process is favorable to the maintenance of a diversified fauna.

The Domaine has the Ecocert certification, which means that it is recognized as organic. Mathilde wishes to go further and is moving towards biodynamics: herbal tea, work according to the lunar calendar... The vines are cultivated and cared for without the use of fertilizers or chemical products. Each step is therefore punctuated by meticulous care and done by hand.

In particular, the pruning work, which consists in removing a certain number of buds, allows to keep only the most beautiful branches, the best distributed. Thus, the estate is subject to small yields for the benefit of a very high quality product.
